Carols, i assume you mean, and not corals...although some yuletide snorkeling would be nice...;-)

Last night i was practicing several, mostly in 1st or 4th positions(starting on the 6b)...That's a good place to start actually, and just play the melodies as you know them to be at first, then later embellish if you like. Here's a few:

Silent Night
Jingle Bells
Santa Claus is Coming to town
Christmas time is Here(the charlie Brown/Vince Guaraldi tune)
Sleigh Ride
Little Town of Bethlehem
Rudolph the Red-nosed Reindeer
...I know I played more than that last night, but that's from the top of my head

O Tannenbaum/ O Christmas Tree (one of the first songs I ever learned)
White Christmas (slow enough so you can think of the next note, but classic enough so you get a feeling of accomplishment.)

Carol of the Bells
Grandma Got Run-Over by a Reindeer (although it's not nearly as funny without vocals)
Winter Wonderland

Deck the Halls isn't to bad, lots of notes but mostly in pretty simple runs.
Frosty the Snowman

Adeste Fideles ( O Come All Ye Faithful)
Away In A Manger.
Little Drummer Boy (Little baby, pa rum pum pum pum)
Hark The Herald Angels Sing
God Rest Ye Merry Gentlemen (4th Pos)
Jesu Joy (not Christmas, but religious, and fits in)
