Guys on the fender bassman (which i am loving and sounds much better with Valve changes) which control is it that reduces boom. I.e when i am playing and i breath or play certain parts of the harp there is too much boom or bass i can hear my breath which is distracting from a clean tone. I have turned down bass and played around with the presence but which one is it - ta

I dunno if you can totally control that with EQ but sounds like you could back off the bass and feed a bit more highs or mid in. This might also explain why you’re struggling to hear it on stage.
The controls are interactive; it’s not really a case of this or that exclusively

What's your tube layout?? If your running a 12AU7 in V3, get it out of there and replace with a 12AT7.
A 12AU will eventually burn out the plate load resistor in a stock bassman.
Are all the speakers secure on baffle?
Does turning bass down help?
